Afternoon Session: Breaking Down the Deer

Step into the butcher shop and learn how to transform a deer into quality cuts for your freezer. You'll learn:

How to break a deer into primal cuts

Identification of major muscle groups

Proper knife techniques

Deboning and trimming

Which cuts are best for steaks, roasts, grinding, and specialty products

Packaging and freezer storage tips
